Every Saturday our vendors fill the market with fresh, local produce and meats, fresh pastries, amazing, handmade crafts, soaps and lotions, organic coffee, chocolate covered hazelnuts and so much more. Tried and True Recipes we LOVE!

You’ve got to try this amazing recipe from Mary at Songbird Java! This is a deliciously moist cake made with fresh rhubarb but other fruits can be used for substitution. I’ve heard it’s wonderful with raspberries! Our vendors will have a large variety of fruits available at the market this Saturday that would be perfect in this cake.

Rhubarb Cake
1C. Sugar
1t. Baking soda
1/2 t. Salt
2 C. Flour
2 eggs
1 C. Greek style plain yogurt or sour cream
1 lb. Rhubarb= 4 cups diced
1/2 c. Brown sugar
1/4 c. Soft butter
1/4 c. Flour
1/2 t. Cinnamon

Grease a 9×13 pan.
In large bowl, stir together sugar, soda, salt, and 2 c. Flour. Stir in the eggs and yogurt until smooth, then fold in rhubarb. The batter will be very thick. Pour into prepared pan and spread it evenly.

In small bowl, stir together brown sugar and butter until smooth. Stir in 1/4 c. Flour and cinnamon until it looks crumbly. Then sprinkle the mixture over the cake.
Bake until toothpick inserted in center of cake comes out clean, about 45 minutes.
Serve with whipping cream…!
